  • 2 lbs Mushrooms (fresh, sliced): The star of the dish, offering an earthy, umami flavor and meaty texture.
  • 4 cups Chicken Broth: Adds a savory, flavorful liquid base that complements the richness of the soup.

HOW TO PREPARE CREAMY MUSHROOM SOUP?

Time needed: 50 minutes

  1. Melt Butter and Saute Onions:


    Melt butter in a large pot over medium heat. Add onions; cook and stir until softened, about 5 minutes.


    MELT BUTTER IN MEDUIM SAUCE PAN AND ADD THE ONIONS-- SAUTE UNTIL SOFTENED

  2. Add Mushrooms:


    Add the mushrooms and sauté for 5 more minutes.


    ADD MUSHROOMS TO THE SAUCE PAN COOK ADDITIONAL 5 MINUTES

  3. Add in Broth and Spices:


    Stir in chicken broth, soy sauce, paprika, and dill weed; reduce heat to low, cover, and simmer for 15 minutes.


    ADD CHICKEN BROTH, DILL WEED AND PAPRIKA TO THE SAUCE PAN.

  4. Add Milk:


    Whisk milk and flour together in a separate bowl; stir into soup until blended. Cover and simmer on low until heated through about 5 more minutes, stirring occasionally.


    ADD THE MILK AND FLOUR SLURRY TO THE SOUP

  5. Add Sour Cream, Parsley, and Lemon Juice:


    Add sour cream, parsley, lemon juice, salt, and ground black pepper; stir over low heat until warmed through, about 3 minutes. Do not let it boil.


    ADD SOUR CREAM, LEMON JUICE AND PARSLEY

  6. Garnish and Serve:


    Serve Immediately!


    GARNISH AND SERVE IMMEDIATELY

Can I use different types of mushrooms for this soup?


Yes, a mix of mushrooms like cremini, shiitake, or button mushrooms can add depth of flavor.

Can I make this soup vegetarian?


Absolutely! Substitute the chicken broth with vegetable broth for a vegetarian version.

How do I prevent the soup from curdling when adding the sour cream?
