WHAT IS SWISS STEAK?

Swiss steak is a classic American dish that typically consists of tender cuts of beef, often round or chuck steak, that have been pounded or mechanically tenderized. The meat is then coated in flour and browned before being slow-cooked in a garlic sauce. This sauce could include ingredients like tomatoes, onions, garlic, and sometimes bell peppers. The dish is called “Swiss” not because it originates from Switzerland, but because the technique of tenderizing the meat is known as “swissing.” The result is a hearty, comforting dish with tender beef and a flavorful, thickened sauce.

HOW DO YOU PREPARE SWISS STEAK?

To begin tenderize the beef with a meat mallet. Salt and pepper the beef on both sides.

Dredge the beef in flour and set aside.

Heat the oil or bacon fat in the Dutch Oven over medium-high heat. Brown the beef on both sides.

It’s important not to completely cook the beef in this step. Once the beef has browned set it aside.

PLATE OF FRIED BEEF

In the same Dutch Oven add your garlic for one minute (until it becomes fragrant) then deglaze the bottom of the pan with one cup of beef broth. Scrap all the frying bits off the bottom of the pan. Add the beef back into the Dutch Oven and the remaining beef broth. Stir to combine the garlic into the beef broth.

ADDING GARLIC, BEEF BROTH AND BEEF BACK TO THE PAN

THREE COOKING OPTIONS:

Stovetop METHOD:

On the stove bring the beef to a boil and let it simmer on the stove for 1 1/2 to 2 hours until the beef begins to fall apart. Make sure you periodically scrap the bottom with a flat wooden spoon so the beef doesn’t begin to stick to the bottom.

Oven Method:

Cover the Dutch Oven and place it into a 325-degree F oven for 1 1/2 to 2 hours, Make sure you periodically scrape the bottom with a flat wooden spoon so the beef doesn’t begin to stick to the bottom.

SLOW COOKER METHOD:

Cover and cook on low for 6 to 8 hours on low. Serve immediately with sauce.

FINISHED PRODUCT

There is no need to thicken the sauce it will automatically thicken due to the flour dredge that’s on the meat. Ensure you taste the Swiss Steak for salt and pepper prior to serving. I like to add a teaspoon spoonful of Vegeta at the end for more flavor. But this is optional. Serve with rice, noodles, or Creamy Garlic Mashed Potatoes.

hOW TO STORE AND REHEAT LEFTOVER EASY GARLIC SWISS STEAK?

Storing Easy Garlic Swiss Steak:

  1. Refrigeration: Allow any leftover Swiss steak to cool to room temperature. Transfer it to an airtight container or wrap it tightly in aluminum foil or plastic wrap.
  2. Label and Date: It’s a good practice to label the container with the contents and the date of preparation. This helps you keep track of how long it’s been stored.
  3. Refrigerate: Place the container in the refrigerator. It can be stored for up to 3-4 days.

  • 10 Cloves Garlic (minced)
  • 4-5 Cups Beef Broth
  • ½ Cup Flour (to dredge)
