INGREDIENTS TO MAKE IT

The recipe is simple with just a few pantry staple ingredients. It’s crisp around the edges, moist, and tender in the center. It’s like a mix between cornbread and casserole, and here is what you need to make it:

  • Whole Kernel Corn — Paula Deen’s original recipe calls for fresh corn, but there’s nothing wrong with using the canned.
  • Cream-Style Corn — Since cream-style corn contains pureed corn, it gives the casserole a gooey consistency.
  • Sour Cream . It is responsible for making the casserole creamy and tangy. Y
  • Corn Muffin Mix — The Jiffy brand boxed cornbread mix is the way to go and will make your life so much easier. But if you are feeling ambitious you can always make it yourself.

PRO TIPS and variations FOR THE BEST CORN CASSEROLE

  • For those overachievers in the crowd instead of using a boxed corn muffin mix, you can always make your own by combining flour, sugar, cornmeal, baking powder, salt, and butter.
  • Beat two eggs into the batter for a fluffier corn casserole.
  • Cut the sour cream in half and add 4oz cream cheese for a hint of tanginess.
  • Up the casserole’s flavor by adding bacon, green chilies, jalapenos, green onions, and other cheeses.
  • Add some cayenne pepper or red pepper flakes to spice things up.
  • Shred your own cheese. Shredding it yourself is a little more work but the flavor is better and the cheese melts nicer.
  • Instead of a 9 x 13 glass baking dish, use an oval casserole dish for extra crisp edges.

To store leftovers place them in an airtight container and refrigerate for up to 3 to 4 days.

To rewarm place in an oven-safe dish in the oven at 350 degrees F for 10 to 20 minutes.  For individual leftover servings, I suggest reheating in the microwave or on the stovetop in a skillet until warm all through. Allow the casserole to cool completely. Fill it in a freezer-safe container or zip-top freezer bag and freeze for up to 3 months. To defrost place in the refrigerator overnight; the texture obviously won’t be the same as a freshly baked or refrigerated casserole.
