This Simple Chicken Salad recipe is made with basic ingredients you already have at home. It can be ready in just a few minutes and is so delicious and can be served on its own in a bowl or in a sandwich. It’s best to make Chicken salad when you have leftover chicken that nobody really wants to eat. Additionally, these classic flavors are creamy and delicious and are perfect for your lunch tomorrow.

WHY IS IT CALLED CHICKEN SALAD?

The simple answer is because of the dressing. The definition of salad is a cold dish that includes chopped pieces of food that are mixed with a dressing or mayonnaise. Finally, if something has a dressing you can confidently call it a salad!

HOW DO YOU PREPARE CHICKEN SALAD?

Remove all the bones from the chicken and chop the meat into small bite-sized pieces. Place chicken into a large mixing bowl. Stir in the diced onion and celery.

Add the mayo and combine well. Season with salt, pepper, dijon mustard, and paprika.

ADD THE SEASONING TO THE CHICKEN AND VEGETABLES

Mix everything together well.

Place the chicken salad in an airtight container and refrigerate for a couple of hours so the flavors can marry together.

HOW TO SERVE CHICKEN SALAD?

There are a few ways to serve chicken salad but sometimes I find myself just eating it straight out of the bowl with a spoon because it’s that good.

But there are a few ways to turn it into a meal:

  • Sandwich: Spoon it in between your favorite bread with a layer of lettuce and sliced tomato.
  • Wrap: Use your favorite tortillas and turn them into a wrap.
  • Low Carb/Lettuce Wrap: For a lighter option, use large romaine or butter leaf lettuce and roll it up.
  • Salad/Soup: Pour a spoonful on top of a bed of greens. Or add in my favorite soup try Cheesy Cauliflower Cheddar Soup to round out lunch.
  • Scoop it up: Spoon it on your favorite buttery cracker (Ritz) or scoop it up with pita chips.

HOW TO STORE AND FREEZE LEFTOVERS?

You can store leftovers in an airtight container in the refrigerator for up to four days. It is not recommended to freeze chicken salads that have mayonnaise because the texture can become grainy after being defrosted.

  • 1 Cup Mayo

  • 1 Cup Purple Onion (finely chopped)
  • 1 tsp Dijon Mustard
