This Crockpot Creamy Mushroom Steak Bites is a savory meal made with pantry staple ingredients to create a melt-in-your-mouth meal! This is the easiest recipe you can make with simple ingredients that transform boring beef into a comforting meal. A few simple ingredients and just 15 minutes of preparation time make this crockpot meal a big hit! The beef is fall-apart tender and it’s perfectly seasoned and soakes up an incredible beef-flavored sauce. Best served with egg noodles or mashed potatoes for a meal everyone will love.

INGREDIENTS TO MAKE IT

  • 3 pounds beef stew meat (cut into 1-inch bites) – I use bite-size pieces so the beef cooks evenly and stays tender.
  • 1 envelope onion soup mix – I add this for easy seasoning and big flavor without extra spices.
  • 2 envelopes brown gravy mix (or Kinder Bone Broth Gravy) – This helps create a rich, savory sauce that thickens perfectly.
  • 1 can cream of mushroom soup – I use this to make the sauce creamy, comforting, and full of mushroom flavor.
  • ¼ cup Worcestershire sauce – I add this for deep, beefy flavor with a little tang.
  • 2 (8-ounce) packages mushrooms, sliced – Fresh mushrooms add hearty texture and soak up the sauce.
  • 5–6 cloves garlic, minced – I use plenty of garlic to boost flavor.
  • 1 large onion, diced – The onion cooks down soft and sweet for extra depth.
  • 2 cups beef broth (or water) – I use broth to keep everything juicy and flavorful as it cooks.
  • Beef bouillon cubes (optional) – I add one for an extra punch of beef flavor if needed.

HOW TO PREPARE CROCKPOT CREAMY MUSHROOM STEAK BITES

Time needed: 4 hours

  1. Prepare the Beef Bites:


    Prepare the beef stew meat. Ensure all the pieces are cut into cubes that are about the same size. Season the meat with salt and pepper. In a large skillet over medium-high heat, sear the beef in batches. You are not cooking the beef all the way through, just browning the outside and transferring it to the crockpot. Continue this step until all the beef is browned.

  2. Prepare the Gravy:


    In a glass bowl, combine the beef broth, cream of mushroom soup, onion soup mix, bone broth gravy/brown gravy envelopes, and Worcestershire sauce. Whisk all these ingredients together, pouring over the beef in the crockpot.

  3. Add the Mushroom:


    Add the mushrooms, onion, and garlic to the crockpot. Give everything a good stir. Set the crockpot to HIGH (4 hours) or LOW (8-10 hours).

Can I use a different cut of beef?


Yes, I often use chuck roast cut into chunks because it becomes extra tender in the slow cooker.

Do I need to brown the beef first?


No, but browning does add extra flavor if you have time.

Can I make this ahead of time?


Yes, I make it a day ahead and reheat it slowly, and it tastes even better the next day.

What if my sauce is too thick?

What to do with stew meat besides making stew?


When I don’t want stew, I love using stew meat to make mushroom steak bites. I sear the meat until browned, then cook it with mushrooms, butter, and garlic for big flavor. It’s quick, hearty, and feels way more exciting than stew.

  • Turn it into a low-carb meal – I skip the mashed potatoes and serve the steak bites over cauliflower mash or zucchini noodles for a lower-carb option.

Let’s talk side dishes!  Sometimes my favorite part of the meal is the side dishes but, here the Crockpot Creamy Mushroom Steak Bites really shines the most!  One of my favorite things to serve with this is Creamy Garlic Mashed Potatoes!  But we have a great recipe for Easy Homemade Hassleback Potatoes or Maple Roasted Carrots if you are having a quick evening dinner. Or to keep things low carb, then add a green side salad, with your favorite chopped-up vegetables and dressing.

HOW TO STORE AND REHEAT LEFTOVER creamy beef bites?

I store leftovers in an airtight container in the refrigerator for up to four days. When reheating, I warm them gently on the stove or in the microwave so the beef stays tender. If the sauce thickens too much, I stir in a splash of beef broth to loosen it up. I always reheat just until warmed through and avoid overcooking.

CAN LEFTOVER SLOW-COOKER BEEF CUBES BE FROZEN?

Yes, this recipe freezes very well. I let it cool completely, then transfer it to freezer-safe containers or bags and freeze for up to three months. When I’m ready to use it, I thaw it overnight in the refrigerator. I reheat it gently and stir well so the sauce becomes creamy again.
