These Easy Bacon Zucchini Bites are an addictive snack, side dish, or appetizer. Tasty little zucchini bites are loaded with zucchini, bacon and cheddar cheese then baked until puffy. It is the perfect way to use up those extra zucchini from the summer garden.  These zucchini bites are made in a two bite form making them a great choice for serving as an appetizer. They will disappear fast at your next party.

HOW TO PREPARE BACON ZUCCHINI APPETIZER BITES?

Combine all the ingredients together: flour, zucchini, egg, baking powder, cheese, milk, salt and pepper.

All ingredients combined.

Preheat the oven to 375 degrees F. Grease the mini muffin pan with non-stick cooking spray. Evenly spoon the filling into the mini muffin pan.

Bake for 20 minutes @ 375 Degrees F.

HOW TO STORE, REHEAT, AND FREEZE LEFTOVERS?

  • Allow the Zucchini Puffs to cool completely before storing them.
  • Place them in an airtight container or resealable freezer bag. Then store in the refrigerator for up to 3 to 5 days.
  • To freeze arrange the muffins on a cookie sheet and place cookie sheet in freezer. Once the muffins are indiviually frozen you can put them all in one gallon size resealable freezer bag. You can remove as many as you need each time to reheat and enjoy anytime. Also, they can be frozen for up to three months.
  • To thaw and reheat, remove from freezer and let thaw in the refrigerator overnight. Place in the oven at 350 degrees F for 8-10 minutes. Additionally the air fyer set at 350 degrees F for 5 minutes is another reheat option. Until the outside crust is crispy again.

Equipment

Ingredients

  • ¾ Cup Flour
  • 1 Cup Zucchini (grated and squeezed of moisture)
  • 1 Egg
  • 5 Slices Bacon (fried crispy and chopped)
  • 1 Tsp Baking Powder
  • ½ Cup Cheddar Cheese (shredded)
  • 1 Tsp Italian Seasoning
  • ¾ Cup Milk
  • Salt And Pepper (to taste)

Instructions

Prepare Zucchini

  • Grate the zucchini sprinkle it lightly with salt. Let it sit for 15 minutes and then squeeze as much water out as you can.

Prepare the Bites

  • Combine all the ingredients together: flour, zucchini, egg, baking powder, bacon, cheese, Italian seasoning, milk, salt and pepper.
  • Preheat the oven to 375 degrees F. Grease the mini muffin pan with non-stick cooking spray.
  • Evenly spoon the filling into the mini muffin pan.
  • Bake for 20 minutes.
  • Serve with a dip like ranch dressing, sour cream, marinara sauce, or even plain Greek yogurt.
