These Easy Bacon Zucchini Bites are an addictive snack, side dish, or appetizer. Tasty little zucchini bites are loaded with zucchini, bacon, and cheddar cheese then baked until puffy. It is the perfect way to use up those extra zucchini from the summer garden.  These zucchini bites are made in a two-bite form making them a great choice for serving as an appetizer. They will disappear fast at your next party.

Ingredients

  • ¾ Cup Flour
  • 1 Cup Zucchini (grated and squeezed of moisture)
  • 1 Egg
  • 5 Slices Bacon (fried crispy and chopped)
  • 1 Tsp Baking Powder
  • ½ Cup Cheddar Cheese (shredded)
  • 1 Tsp Italian Seasoning
  • ¾ Cup Milk
  • Salt And Pepper (to taste)

Instructions

  • Preheat Oven: Start by preheating your oven to 375°F (190°C) and prepare a mini muffin tin by lightly greasing each cup or lining them with nonstick spray.
  • Prepare the Zucchini: Grate 1 cup of zucchini and, using a paper towel or cheesecloth, squeeze out as much moisture as possible. This helps the bites hold together better and prevents them from becoming soggy.
  • Combine Dry Ingredients: In a large mixing bowl, combine ¾ cup flour, 1 teaspoon baking powder, 1 teaspoon Italian seasoning, and a pinch of salt and pepper. Stir to mix well.
  • Add Wet Ingredients: Whisk 1 egg and ¾ cup milk together in a small bowl, then pour into the dry mixture. Stir until just combined.
  • Mix in Zucchini and Bacon: Fold in the grated zucchini, ½ cup shredded cheddar cheese, and 5 slices of crispy chopped bacon. Stir gently until all ingredients are evenly distributed.
  • Fill the Muffin Tin: Spoon the batter into the mini muffin tin, filling each cup about ¾ of the way.
  • Bake: Place in the preheated oven and bake for 15–18 minutes, or until the bites are golden on top and a toothpick comes out clean when inserted into the center.
  • Serve: Let cool for a few minutes, then remove the bites from the tin. Serve warm, and enjoy these deliciously cheesy, savory zucchini bites!
  • These are best enjoyed fresh but can also be served at room temperature.
