Teriyaki Sauce Ingredients:

  • 1 cup Soy Sauce
  • ½ cup Brown Sugar
  • 2 Tsp Fresh Ginger minced
  • 6 Cloves Garlic minced
  • 2 Tbsp Honey Vegans: Agave Nectar
  • 2 Tsp Sesame Oil
  • 6 Tbsp Mirin (more info in notes below)
  • ¼ cup Water mixed with 3 teaspoons cornstarch

Panko Chicken Breast Ingredients:

  • 3 lbs Chicken Breasts or chicken thighs boneless and skinless
  • 1 Cup Flour to dredge
  • 3 Eggs beaten (to dredge)
  • 2 Cups Panko Breadcrumbs to dredge
  • Salt and Black Pepper to taste

Instructions

Step 1: Prepare the Teriyaki Sauce

  • In a medium saucepan, combine 1 cup of soy sauce, ½ cup of brown sugar, 2 teaspoons of minced fresh ginger, 6 cloves of minced garlic, 2 tablespoons of honey (or agave nectar for vegans), 2 teaspoons of sesame oil, and 6 tablespoons of mirin.
  • Place the saucepan over medium heat and stir until the brown sugar has completely dissolved.
  • Allow the mixture to come to a gentle simmer, then let it simmer for a few minutes.
  • In a small bowl, mix together ¼ cup of water with 3 teaspoons of cornstarch until fully dissolved.
  • Pour the cornstarch mixture into the saucepan, stirring constantly.
  • Let the sauce simmer for an additional 2-3 minutes, or until it has thickened to your desired consistency. Adjust seasoning if needed.
  • Remove from heat and set aside to cool.

Step 2: Prepare the Chicken

  • Preheat your air fryer to 400°F (200°C).
  • Cut the chicken breasts into bite-sized pieces.
  • Season the chicken pieces with salt and black pepper to taste.
  • Set up a dredging station with three separate bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  • Dredge each piece of chicken in the flour, then dip it into the beaten eggs, and finally coat it evenly with panko breadcrumbs, pressing gently to adhere.

Step 3: Air Fry the Chicken

  • Once the air fryer is preheated, place the coated chicken pieces in a single layer in the air fryer basket, making sure they are not overcrowded.
  • Depending on the size of your air fryer, you may need to cook the chicken in batches.
  • Spray the chicken lightly with cooking spray.
  • Air fry at 400°F (200°C) for 8-10 minutes, flipping halfway through, or until the chicken is golden brown and cooked through.
  • Remove the cooked chicken from the air fryer and transfer it to a large bowl.
  • Pour the prepared teriyaki sauce over the chicken and toss gently to coat evenly.
