Ingredients

  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 cup granulated sugar
  • ½ cup brown sugar (packed)
  • ½ cup vegetable oil (or melted butter for richer flavor)
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 ¼ cups semi-sweet chocolate chips (reserve a handful for topping)

Instructions

  • Preheat oven to 350°F (175°C). Grease and line a 9x13-inch baking pan with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  • In a large bowl, whisk pumpkin, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
  • Gradually stir in the dry ingredients until just combined—don’t overmix.
  • Fold in most of the chocolate chips.
  • Spread batter evenly into prepared pan. Sprinkle the reserved chocolate chips on top.
  • Bake 28–32 minutes, or until a toothpick inserted in the center comes out mostly clean (a few moist crumbs are fine).
  • Cool in the pan before slicing into bars.
  • Optional: Dust with powdered sugar or drizzle with melted chocolate once cooled.
