  • ¼ Cup Tomato Paste
  • 4 Cups Chicken Broth
  • 2 Cups Water (or more as needed to adjust consistency)
  • 1 Tbsp Italian Seasoning
  • 8 Ounces Bowtie Pasta (uncooked, dry)(or use your favorite pasta)
  • ¾ Cup Parmesan Cheese (shredded)
  • Sea and Black Ground Pepper (to taste)

Instructions

  • Prepare the Ingredients: Start by chopping the onion and mincing the garlic. Set these aside for easy access during cooking.
  • Cook the Ground Beef: Heat the olive oil in a large pot over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until it's browned and fully cooked, about 5-7 minutes.
  • Sauté Onion and Garlic: Add the diced onion to the pot with the beef and cook for 3-4 minutes until softened. Add the minced garlic and cook for another 1 minute, stirring frequently to prevent burning.
  • Add the Tomatoes and Tomato Sauce: Stir in the can of diced tomatoes (with juices), tomato sauce, and tomato paste. Mix well to combine everything.
  • Add Broth and Water: Pour in the chicken broth and water, and stir to combine. Taste and adjust the consistency by adding more water if needed.
  • Season the Soup: Sprinkle in the Italian seasoning and season with sea salt and black pepper to taste. Stir to incorporate the spices into the soup.
  • Add Pasta: Stir in the uncooked bowtie pasta (or your preferred pasta). Allow the soup to come to a simmer. Cover and let it cook for about 8-10 minutes, or until the pasta is tender and the soup is thickened.
  • Finish with Cheese: Once the pasta is cooked, stir in the shredded Parmesan cheese until melted and combined. Taste again and adjust seasoning as needed.
  • Serve and Garnish: Ladle the soup into bowls. Add a generous scoop of ricotta cheese, a sprinkle of mozzarella, and additional Parmesan cheese. Garnish with fresh chopped parsley for a burst of color and flavor.
