Ingredients

  • 8 Chicken Cutlets
  • 4 Tbsp Vegetable Oil
  • 1/2 Cup Vodka
  • 1 Cup Chicken Broth
  • 4 Tbsp Lemon Juice
  • 1 Cup Tomato (fresh)(diced)
  • 4 Tbsp Heavy Cream
  • Scallions (garnish)
  • Salt
  • Pepper

Instructions

  • Take four chicken breasts and fillet in half. Lightly pound each cutlet with a meat mallet to make them even in thickness. Salt and pepper each side and dredge in flour.
  • Saute the cutlets in oil until golden brown. Transfer to a platter. Pour off the excess fat from the pan.
  • Deglaze the pan with the vodka (away from the flame) and cook the sauce until vodka is nearly gone.
  • Add the chicken broth and lemon juice to the pan. Return the cutlets to pan and cook each side 1 minute more then transfer the cutlets back to a warm plate.
  • Finish the sauce with tomatos and cream. Heat the sauce throughly, then pour the sauce over the cutlets.
  • Garnish with scallions.
