Chicken Pomodoro

- 8 Chicken Cutlets
- 4 Tbsp Vegetable Oil
- 1/2 Cup Vodka
- 1 Cup Chicken Broth
- 4 Tbsp Lemon Juice
- 1 Cup Tomato (fresh)(diced)
- 4 Tbsp Heavy Cream
- Scallions (garnish)
- Salt
- Pepper
Take four chicken breasts and fillet in half. Lightly pound each cutlet with a meat mallet to make them even in thickness. Salt and pepper each side and dredge in flour.
Saute the cutlets in oil until golden brown. Transfer to a platter. Pour off the excess fat from the pan.
Deglaze the pan with the vodka (away from the flame) and cook the sauce until vodka is nearly gone.
Add the chicken broth and lemon juice to the pan. Return the cutlets to pan and cook each side 1 minute more then transfer the cutlets back to a warm plate.
Finish the sauce with tomatos and cream. Heat the sauce throughly, then pour the sauce over the cutlets.
Garnish with scallions.
