- 4 Large Chicken Breasts (cut in half into cutlets and pounded )
- Salt and Pepper (to taste)
- ½ Cup Flour (used to dredge)
- 3 Tbsp Butter
- 2 Tbsp Olive Oil

- ½ Cup Dry White Wine or Chicken Broth
- 5 Cloves Garlic (minced)
- 2 Tbsp Dijon Mustard
- 2 Cups Heavy Whipping Cream
- ½ Cup Parmesan Cheese (shredded)
- 4 Cups Baby Spinach
- ½ Cup Sun-Dried Tomato (chopped)
- 2 Tbsp Basil (fresh)(chopped) or 1 Tsp Dried Basil
Prepare the Chicken:
Prep the Chicken: Begin by cutting the chicken in half into cutlets, pound the chicken with a meat mallet, seasoning both sides of the chicken breasts with salt and pepper, and dredging in flour. This will ensure a well-balanced flavor throughout the dish.
