  • 6 Eggs
  • 3 Cups Almond Milk (unsweetened)
  • 6 Tbsp Sugar
  • 2 Tsp Vanilla Extract
  • ½ Cup Coconut Oil (melted)
  • 2 Cups Flour

Instructions

  • Add almond milk, eggs, vanilla, and a little sugar to a mixing bowl. Beat until foamy with the electric mixer.
  • Add flour and melted coconut oil to the bowl and continue to mix on high speed with the mixer until the ingredients are combined and smooth. Let the batter rest for 30 minutes to bring all the ingredients up to room temperature.
  • Grease your non-stick pan with a tablespoon of coconut oil or cooking oil. Make sure it's a hot pan.
  • Over medium heat use the soup ladle to scoop the mixture into the pan and use wrist action to swirl it in a thin layer around the pan.
  • On the first side, you will notice the edges getting golden brown it's time to flip over.
  • Flip over for another minute until the other side starts to get brown spots. Frying the first crepe is always the hardest but you will master the wrist action swirl technic before you know it.
  • Remove from pan and let the perfect crepes cool.
