- 1 lbs. Chorizo (pork)
- 1 Green Bell Pepper (diced)
- 1 Onion (diced)
- 2 Jalapeno Peppers (cleaned and finely chopped)
- 1 Can Diced Tomatoes (fire roasted) (do not drain)
- 1⅓ lbs. Yukon Gold Potato (peeled and cubed)(boiled 10 minutes)
- 8 Eggs
- Salt and Pepper (to taste)
In a large skillet over medium heat, sauté the pork chorizo until it's browned and cooked through.
Boil the potatoes in a separate pot of boiling water for 10 minutes. Drain and set aside.
.Add the diced green bell pepper, diced onion, and finely chopped jalapeño peppers to the skillet. Sauté and stir with a wooden spoon until the vegetables are tender and aromatic.
Stir in the undrained fire-roasted diced tomatoes, allowing the flavors to meld with the chorizo and vegetables.
Incorporate the pre-boiled Yukon Gold potatoes, ensuring they are well-coated with the flavorful mixture.
