- 2 Pounds Carrot (washed and peeled)
- 4 Cloves Garlic (minced)
- ⅓ Cup Maple Syrup
- ¼ Cup Brown Sugar
- 4 Tbsp Butter (diced into cubes)
- Chopped Parsley (garnish)
- Walnuts (optional) (chopped)
Preheat the oven to 400 degrees F.
Foil line a rimmed baking sheet. Set aside while you prepare the carrots.
Peel and wash two pounds of carrots. Transfer the carrots to the baking sheet and spread them out in one single layer. Set aside again.
Whisk and combine the maple syrup, brown sugar, and garlic in a bowl.
Pour the maple mixture over the carrots. season with salt and pepper and toss to coat the carrots. Randomly dot the butter pieces all over the carrots.
Bake for 30 minutes, toss the carrots at least once halfway through baking, Begin to check for doneness at the 20-minute mark by piercing the thickest part of the carrot with a fork. Depending on the thickness of the carrot or how you cut them will affect how long they bake.
Remove from oven and taste the carrots for seasonings add more salt if necessary, Garnish with fresh herbs and optional chopped walnuts.
