- 1 tbsp fresh parsley chopped
- 1 tsp dried thyme
- 1 tsp dried rosemary
Topping
- 4 cups mashed potatoes (hot and creamy) (add butter + warm milk to your mash — don’t skimp)
- ½ cup shredded cheddar cheese

Thicken the gravy: Sprinkle flour over mixture, stir well, cook 1 minute. Slowly add wine, scraping the pan. Add broth and Worcestershire.
Simmer: Reduce heat and simmer 8–10 minutes until thick and spoonable. Stir in peas and fresh herbs. Taste and adjust seasoning.
Assemble: Spread filling into a baking dish. Spoon mashed potatoes on top, spread evenly.
Finish like a pro: Drag a fork across the potatoes for crispy ridges. Sprinkle cheddar over top.
