- 3 lbs Red Potatoes (scrubbed clean and cubed)
- 6 Cups Chicken Stock
- 1 (8 oz Brick) Cream Cheese (full fat)
- 1 Stick Unsalted Butter (melted)
- 6 Cloves Garlic (minced)
- ½ Cup Whole Milk (room temp)
- ½ Cup Heavy Cream (room temp)
- 2 Tbsp Chives (finely chopped)(mix in half and use as garnish)
- Salt and Black Ground Pepper (to taste)
Cook the Potatoes: Place the cubed red potatoes in a large pot and cover with chicken stock. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 15-20 minutes, or until the potatoes are fork-tender.
Prepare the Garlic Butter: While the potatoes are cooking, melt the butter in a microwave-safe bowl along with the minced garlic. Microwave in 30-second intervals until fully melted and fragrant, allowing the garlic to infuse the butter with flavor. Set aside.
Drain the Potatoes: Once the potatoes are tender, drain them well and return them to the pot.
Mash the Potatoes: Add the cream cheese, garlic-infused melted butter, whole milk, and heavy cream to the potatoes. Mash with a potato masher or hand mixer until smooth and creamy.
Season and Mix: Add salt and black pepper to taste. Stir in half of the chopped chives, mixing gently.
Serve and Garnish: Transfer the mashed potatoes to a serving dish and garnish with the remaining chives. Enjoy!
