- 4 lbs. Butternut Squash (ends trimmed, halved, and seeded)
- 2 Tbsp Extra Virgin Olive Oil
- ¼ Tsp Kosher Salt
- 4 Tbsp Unsalted Butter
- 1 Tsp Cinnamon
- ¼ Tsp Smoked Paprika
- ½ Tsp Chipotle Powder
Preheat oven to 400 degrees F. Rub the butternut squash all over with the olive oil and season with salt.
Place on a baking sheet, cut side down, and roast on the middle rack for 45 minutes or until the flesh is easily pierced with a knife.
When cool enough to handle scoop out the flesh with a spoon and transfer to a food processor. Process until smooth for 1-2 minutes.
In a small saucepan over low heat, melt the unsalted butter. Add the cinnamon, smoked paprika, and chipotle powder. Stir well to combine. Remove from heat.
Add to the food processor the butter, cinnamon, smoked paprika, and chipotle powder. Blend for an additional minute until completely smooth and the ingredients are blended well.
Taste the mash and adjust the seasoning if needed. You can add a bit more salt or spice according to your preference. Add a dollop of butter on top of each serving bowl.
