Ingredients

  • 4 lbs. Butternut Squash (ends trimmed, halved, and seeded)
  • 2 Tbsp Extra Virgin Olive Oil
  • ¼ Tsp Kosher Salt
  • 4 Tbsp Unsalted Butter
  • 1 Tsp Cinnamon
  • ¼ Tsp Smoked Paprika
  • ½ Tsp Chipotle Powder

Instructions

  • Preheat oven to 400 degrees F. Rub the butternut squash all over with the olive oil and season with salt.
  • Place on a baking sheet, cut side down, and roast on the middle rack for 45 minutes or until the flesh is easily pierced with a knife.
  • When cool enough to handle scoop out the flesh with a spoon and transfer to a food processor. Process until smooth for 1-2 minutes.
  • In a small saucepan over low heat, melt the unsalted butter. Add the cinnamon, smoked paprika, and chipotle powder. Stir well to combine. Remove from heat.
  • Add to the food processor the butter, cinnamon, smoked paprika, and chipotle powder. Blend for an additional minute until completely smooth and the ingredients are blended well.
  • Taste the mash and adjust the seasoning if needed. You can add a bit more salt or spice according to your preference. Add a dollop of butter on top of each serving bowl.
