Ingredients

Chicken Marinade

  • 2 lbs. chicken leg quarters (separate the leg and thigh)
  • ¼ cup olive oil
  • 1 lemon (squeezed)
  • 6 Cloves garlic (minced)
  • 4 teaspoons honey
  • 2 teaspoons onion powder
  • 1 teaspoon dried oregano
  • ¼ cup parmesan cheese (grated)
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon red chili flakes

Honey Garlic Parmesan Glaze

  • ½ stick butter (melted)
  • 2 cloves garlic (minced)
  • 2 teaspoon honey
  • ¼ cup parmesan cheese (grated)

Instructions

  • Make the Marinade: Combine all marinade ingredients in a bowl and whisk until blended. Place the chicken pieces in a large zip-top bag. Pour in the marinade and seal tightly. Massage the bag so every piece is well coated. For the best flavor, refrigerate overnight. If you're short on time, 3–4 hours still works great.
  • Why marinate overnight? The acid from the lemon juice gently tenderizes the meat. The garlic and honey have time to penetrate all the way through. You'll taste the difference.
  • Preheat and Bake: Preheat your oven to 400°F. Line a large baking dish with foil for easy cleanup. Arrange the chicken skin-side up in a single layer. Bake for 35–40 minutes. The chicken is done when it reaches an internal temperature of 165°F. Use a meat thermometer inserted into the thickest part of the thigh. Avoid touching the bone — it can give a falsely high reading.
  • Make the Glaze: While the chicken bakes, prepare the honey garlic parmesan glaze. Combine the melted butter, minced garlic, honey, and grated parmesan in a small bowl. Stir until smooth. The glaze should be pourable but thick enough to coat the back of a spoon.
  • Glaze and Serve: Remove the chicken from the oven while it's still hot. Brush the glaze generously over each piece. Serve immediately so the glaze stays warm and glossy.
