Ingredients

Ingredient By the Glass:

  • 2 Cups Watermelon (cubed) (or 6 oz store bought watermelon juice)
  • 1 Lime juiced
  • 1 Tsp Sugar
  • 3 oz White Rum
  • 3 oz Lemon Lime Soda (club soda or sparkling water)
  • 8 Mint Leaves
  • Mint Leaves (garnish)
  • Lime Wedges (garnish)

Ingredients for Party Pitcher:

  • 8 cups watermelon cubed (or 24 ounces watermelon juice)
  • 24 fresh mint leaves
  • 3 limes juiced
  • 1 tablespoon sugar or more to taste
  • 9 ounces white rum
  • 9 ounces lemon-lime soda club soda, or sparkling water
  • Ice for serving
  • Lime wedges for garnish
  • Fresh mint sprigs for garnish

Instructions

  • Muddle the Mint and Lime: In a sturdy glass or cocktail shaker, add 8 mint leaves, the juice of 1 lime, and 1 teaspoon of sugar. Use a muddler or the back of a spoon to gently mash the mint leaves and lime juice together. This releases the mint's essential oils and helps dissolve the sugar.
  • Prepare the Watermelon Juice: Add the watermelon cubes to your blender and blend until smooth. Pour the juice through a strainer to remove the pulp. There should be about 6 or 8 ounces of juice.
  • Add Watermelon Juice: Pour 6 oz of the fresh juice into a bowl with the muddled mint and lime mixture. Stir well to combine.
  • Incorporate the Rum: Add 3 oz of white rum to the mixture. Stir to combine all the ingredients thoroughly.
  • Add Ice and Mix: Divide the mixture between two glasses with ice cubes. Should fill the glasses about 3/4 full.
  • Top with Soda: Top off with 3 oz of lemon-lime soda (or club soda or sparkling water) to add a refreshing fizz.
  • Garnish and Serve: Garnish the drink with lime wedges and a few additional mint leaves for a fresh, decorative touch. Serve immediately and enjoy your Juicy Watermelon Mojito Cooler!

Party Pitcher Instructions

  • Add the watermelon cubes to a blender and blend until completely smooth. Strain through a fine mesh sieve if you prefer a smoother drink.
  • Place the mint leaves, lime juice, and sugar in the bottom of a large pitcher. Gently muddle the mint to release its flavor and aroma.
  • Pour the watermelon juice into the pitcher and stir well to combine with the mint mixture.
  • Add the white rum and stir until everything is evenly mixed.
  • Refrigerate until ready to serve.
  • Just before serving, add the lemon-lime soda, club soda, or sparkling water and stir gently.
  • Fill glasses with ice and pour the watermelon mojito over the ice.
  • Garnish each glass with a lime wedge and fresh mint leaves before serving.
