- 8 Mint Leaves
- 1 Lime juiced
- 1 Tsp Sugar
- 2 Cups Watermelon (cubed) (or 6 oz store bought watermelon juice)
- 3 oz White Rum
- 3 oz Lemon Lime Soda (club soda or sparkling water)
- Lime Wedges (garnish)
- Mint Leaves (garnish)
Muddle the Mint and Lime: In a sturdy glass or cocktail shaker, add 8 mint leaves, the juice of 1 lime, and 1 teaspoon of sugar. Use a muddler or the back of a spoon to gently mash the mint leaves and lime juice together. This releases the mint's essential oils and helps dissolve the sugar.
Prepare the Watermelon Juice: Add the watermelon cubes to your blender and blend until smooth. Pour the juice through a strainer to remove the pulp. There should be about 6 or 8 ounces of juice.
Add Watermelon Juice: Pour 6 oz of the fresh juice into a bowl with the muddled mint and lime mixture. Stir well to combine.
Incorporate the Rum: Add 3 oz of white rum to the mixture. Stir to combine all the ingredients thoroughly.
Add Ice and Mix: Divide the mixture between two glasses with ice cubes. Should fill the glasses about 3/4 full.
Top with Soda: Top off with 3 oz of lemon-lime soda (or club soda or sparkling water) to add a refreshing fizz.
