- 4½ cups all-purpose flour
- 2 ½ cups dark brown sugar (packed)
- ½ cup unsulphured molasses
- 3 teaspoons baking soda
- 2 teaspoons baking powder
- 1 ½ teaspoons salt
- 1 tablespoon ground cinnamon
- 2 teaspoons ground nutmeg
- 1 teaspoon ground cloves
- 4 cups zucchini (grated) (squeeze gently, but keep a little moisture)
- 2 apples (peeled & grated)(honey crisp or gala)
- 2 sticks unsalted butter (melted)
- 5 eggs
- 2 tablespoons vanilla extract
Preheat oven to 350°F (175°C). Grease and line two 9x5-inch loaf pans with parchment.
In a large bowl, whisk together flour, baking soda, baking powder, salt, and spices.
In another big mixing bowl, whisk eggs, oil, molasses, brown sugar, and vanilla until smooth and glossy. Stir in zucchini and apples.
Add dry ingredients to wet, folding until just combined (do not overmix).
Divide evenly into pans. Smooth tops.
Bake 60–70 minutes, until a toothpick comes out with moist crumbs (not wet batter).
Cool in pans 10 minutes, then transfer to a wire rack.
