Ingredients

  • 2 lbs. Sweet Potatoes (peeled and cubed)
  • 2 Tbsp Brown Sugar
  • 2 Tsp Corn Starch
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • 1 Tsp Smoked Paprika
  • 4 Tbsp Olive Oil or Avocado Oil
  • Salt and Pepper (to taste)

Instructions

  • Preheat the oven to 400 degrees F.
  • Peel and cube the sweet potatoes.
  • Place the sweet potatoes in a large bowl and add the olive oil/avocado oil. and toss to coat.
  • Add the brown sugar, cornstarch, onion powder, garlic powder, and smoked paprika, and toss to coat evenly.
  • Line a baking sheet with parchment paper and arrange the sweet potatoes evenly.
  • Place in the oven. Every 15 minutes with a spatula flip and turn the sweet potatoes keeping them arranged evenly on the baking sheet.
  • Continue to do this until the sweet potatoes are crispy on the outside and tender on the inside. The total baking time should be about 45 minutes.
  • Serve them immediately with your favorite protein.
