- 2 lbs. Sweet Potatoes (peeled and cubed)
- 2 Tbsp Brown Sugar
- 2 Tsp Corn Starch
- 1 Tsp Onion Powder
- 1 Tsp Garlic Powder
- 1 Tsp Smoked Paprika
- 4 Tbsp Olive Oil or Avocado Oil
- Salt and Pepper (to taste)
Preheat the oven to 400 degrees F.
Peel and cube the sweet potatoes.
Place the sweet potatoes in a large bowl and add the olive oil/avocado oil. and toss to coat.
Add the brown sugar, cornstarch, onion powder, garlic powder, and smoked paprika, and toss to coat evenly.
Line a baking sheet with parchment paper and arrange the sweet potatoes evenly.
Place in the oven. Every 15 minutes with a spatula flip and turn the sweet potatoes keeping them arranged evenly on the baking sheet.
Continue to do this until the sweet potatoes are crispy on the outside and tender on the inside. The total baking time should be about 45 minutes.
Serve them immediately with your favorite protein.
