- 1 Cup Onion (medium)(diced)
- 2 Cups Red Bell Pepper (2 peppers)(diced)
- 4 Tbsp Butter
- 1 Tbsp Garlic (minced)
- 1 Tsp Nutmeg
- 1 Tsp Thyme
- 1 Tsp Smoked Paprika
- 2 (15 oz) Cans Pumpkin Puree
- 6 Cups Chicken Stock (vegetable stock)
- 2 Cups Gouda Cheese (smoked variety)(shredded)
- 1 Cup Heavy Cream
- Salt and Pepper (to taste)
In a large Dutch oven over medium-high heat add the butter and saute the diced onion and red pepper until softened.
Add the spices (thyme, smoked paprika, and nutmeg) and the garlic. Stir for one minute until fragrant.
Add the two cans of pumpkin and the chicken stock. Bring to a simmer for 20 minutes,
Using an immersion blender blend the soup until smooth.
Add the heavy cream and smoked gouda cheese. Bring the soup back to a simmer and turn off the heat.
Taste the soup and adjust the seasoning add more salt and pepper as you see necessary.
Serve with your favorite grilled cheese sandwiches and enjoy!
