Ingredients

  • 1 Cup Onion (medium)(diced)
  • 2 Cups Red Bell Pepper (2 peppers)(diced)
  • 4 Tbsp Butter
  • 1 Tbsp Garlic (minced)
  • 1 Tsp Nutmeg
  • 1 Tsp Thyme
  • 1 Tsp Smoked Paprika
  • 2 (15 oz) Cans Pumpkin Puree
  • 6 Cups Chicken Stock (vegetable stock)
  • 2 Cups Gouda Cheese (smoked variety)(shredded)
  • 1 Cup Heavy Cream
  • Salt and Pepper (to taste)

Instructions

  • In a large Dutch oven over medium-high heat add the butter and saute the diced onion and red pepper until softened.
  • Add the spices (thyme, smoked paprika, and nutmeg) and the garlic. Stir for one minute until fragrant.
  • Add the two cans of pumpkin and the chicken stock. Bring to a simmer for 20 minutes,
  • Using an immersion blender blend the soup until smooth.
  • Add the heavy cream and smoked gouda cheese. Bring the soup back to a simmer and turn off the heat.
  • Taste the soup and adjust the seasoning add more salt and pepper as you see necessary.
  • Serve with your favorite grilled cheese sandwiches and enjoy!
