  • 2 lbs Baby Potatoes (Baby Red and Yellow) (Fingerling)(halved or quartered)
  • 3 Tbsp Olive Oil
  • 5 cloves Garlic (minced)
  • 1 Tbsp Rosemary (fresh chopped) (or 1 teaspoon dried rosemary)
  • 1 Tbsp Thyme (fresh chopped) (or 1 teaspoon dried thyme)
  • ¼ Cup Parmesan Cheese (grated)
  • Salt and Black Ground Pepper (to taste)
  • Fresh Parsley (optional: garnish)

Instructions

  • Prepare the Potatoes: Wash and dry the baby potatoes thoroughly. Halve or quarter them, depending on their size, ensuring uniform pieces for even cooking.
  • Preheat the Oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  • Season the Potatoes: In a large bowl, toss the potatoes with 3 tablespoons olive oil, 5 cloves minced garlic, 1 tablespoon chopped rosemary, and 1 tablespoon chopped thyme. Add salt and black pepper to taste, mixing well to coat evenly.
