  • 1 Onion (chopped)
  • 2 Tbsp Olive Oil
  • 1 Tsp Salt
  • ½ Tsp Black Ground Pepper
  • ½ Tsp Thyme (dried)
  • ¼ Cup Worcestershire Sauce
  • ½ Cup Chicken Stock
  • 1 Tsp Tomato Paste
  • 3 lbs. Ground Turkey
  • 1 Cup Bread Crumbs
  • 2 Eggs (beaten)
  • ½ Cup Ketchup

Instructions

  • Preheat the oven to 350 degrees f. Line a baking sheet or loaf pan with parchment paper for easy cleanup.
  • Sauté the onion: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped onion, 1 teaspoon of salt, ½ teaspoon of black pepper, and ½ teaspoon of dried thyme. Cook until the onion is softened, about 5 minutes, then stir in the tomato paste and cook for 1 minute.
  • Deglaze the skillet: Add the Worcestershire sauce and chicken stock to the skillet. Stir to combine, then remove from heat and let the mixture cool slightly.
  • Prepare the meatloaf mixture: In a large bowl, combine the ground turkey, bread crumbs, beaten eggs, and the cooled onion mixture. Mix gently with your hands or a spatula until just combined; overmixing can make the meatloaf dense.
  • Shape the meatloaf: Transfer the mixture to the prepared baking sheet or loaf pan. Shape it into a loaf about 9 inches long and 4 inches wide if using a baking sheet.
  • Add the glaze: Spread ½ cup of ketchup evenly over the top of the meatloaf.
  • Bake: Place the meatloaf in the preheated oven and bake for 50-60 minutes, or until the internal temperature reaches 165°F (74°C) on a meat thermometer.
  • Rest and serve: Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps the juices redistribute for a perfectly moist result.
