- 3 pounds Corned Beef Brisket (3-5 pounds)
- 2 Cloves Garlic
- 1 Onion Whole (peeled)
- 1 Bay Leaf
- 1 Bottle Dark Beer (your favorite)
- 1 Bag Baby Carrots
- 6 Red Potatoes or white
- 1 Head Cabbage
- 1 tbsp Seasoning Packets(inside the corned beef)
Remove the corned beef from the package. Rinse with cold water and pat dry with paper towels.
Place the corned beef brisket (fat side up), seasoning packet, whole onion, whole garlic cloves, and bay leaf. Pour a bottle of your favorite dark beer over the meat. Fire up the slow cooker and let it cook on low for 8 hours.
Wait to add the vegetables until there are 2 hours left in the cooking time. Take the corned beef out and add the potatoes, cabbage, and carrots on the bottom and place the meat on top. Continue cooking for another 2 hours or until the vegetables are soft.
Optional Step: Preheat the oven to 500 degrees.
Optional Step: Once everything is cooked place the corned beef in a baking dish and place it in a 500-degree oven for 15-20 minutes more to crisp up the fat layer on the meat.
Remove the cabbage, corned beef, potatoes, and carrots from the slow cooker. Slice the corned beef against the grain. Enjoy!
