- 3 pounds corned beef brisket (3-5 pounds)
- 2 Cloves garlic
- 1 onion (sliced)
- 1 bay leaf
- 1 Bottle dark beer (your favorite)
- 1 Bag baby carrots
- 6 red potatoes (or Yukon gold)
- 1 Head cabbage
- 1 tbsp Seasoning packets(inside the corned beef)
Prepare the Corned Beef: Remove the corned beef from the package. Rinse with cold water and pat dry with paper towels.
Cook the Corned Beef: Place the corned beef brisket (fat side up), seasoning packet, whole onion, whole garlic cloves, and bay leaf. Pour a bottle of your favorite dark beer over the meat. Fire up the slow cooker and let it cook on low for 8 hours.
Add the Vegetables: Wait to add the vegetables until there are 2 hours left in the cooking time. Add the potatoes, cabbage, and carrots to the bottom and place the corned beef on top. Continue cooking for another 2 hours or until the vegetables are soft.
Crisp Under Broiler: Once everything is cooked, place the corned beef in a baking dish and place under the broiler for 3-5 minutes more to crisp up the fat layer on the meat.
Serve and Enjoy: Remove the cabbage, corned beef, potatoes, and carrots from the slow cooker. Slice the corned beef against the grain. Enjoy!
