  • ½ Red Onion (sliced thinly)
  • ½ Cup Dried Cranberries (save more for garnish)

  • 1 Cup Chicken Breast (grilled)(chopped)

Ingredients for Creamy Dressing:

  • 1 Cup Mayonnaise (Full Fat)
  • 2 Tbsp Lemon Juice
  • 4 Tbsp Olive Oil
  • 4 Tsp Honey
  • 2 Tbsp Apple Cider Vinegar
  • 1 Tbsp Whole Grain Mustard
  • ½ Tsp Salt (to taste)
  • ¼ Tsp Black Pepper (to taste)

Cilantro Lime Chicken Breast Marinate:

  • 2 lbs Chicken Breast (boneless skinless)
  • 3 Tbsp Olive Oil
  • ¼ Cup Lime Juice
  • 3 Cloves Garlic
  • 3 Tbsp Cilantro (finely chopped)
  • 1 Tsp Salt
  • ½ Tsp Black Pepper
  • 1 Tsp Paprika
  • 1 Tbsp Honey

Instructions

  • Prepare the Vegetables: In a large bowl, combine the chopped kale (stems removed), shredded cabbage, shredded red cabbage, shredded carrots, broccoli stems, broccoli florets, thinly sliced red onion, dried cranberries, and sunflower seeds. Mix well to combine all the ingredients evenly.
  • Prepare the Chicken: In a separate bowl, prepare the cilantro lime marinade for the chicken. Combine olive oil, lime juice, minced garlic, finely chopped cilantro, salt, black pepper, paprika, and honey. Mix well.
  • Place the chicken breasts in a shallow dish or resealable plastic bag. Pour the marinade over the chicken, ensuring it's evenly coated. Marinate in the refrigerator for at least 30 minutes, or preferably overnight, to allow the flavors to meld.
  • Cook the Chicken: Preheat the grill or grill pan over medium-high heat. Once hot, remove the chicken breasts from the marinade, letting any excess marinade drip off.
  • Grill the chicken breasts for about 6-8 minutes on each side, or until they are cooked through and have nice grill marks. Ensure the internal temperature reaches 165°F (75°C).
