Ingredients

Sweet Dijon Vinaigrette

  • 2 Tbsp Bee Free Honey (see substitutions in the blog post)
  • 1 Tbsp Dijon Mustard
  • 1 Garlic Clove (minced)
  • 2 Tbsp Apple Cider Vinegar
  • ¼ Cup Olive Oil
  • ½ Tsp Salt
  • ¼ Tsp black pepper

For The Kale Apple Slaw

  • 6 Cups Curly Kale (chopped)
  • ½ Red Onion (sliced)
  • ½ Cup Carrots (shredded_
  • 1 Cup Red Cabbage (shredded)
  • 1 Apple (sliced thin)
  • ½ Cup Sunflower Seeds (any nut you prefer)

Instructions

  • Prepare the Dressing: Combine Bee Free Honey, Dijon mustard, garlic, apple cider vinegar, olive oil, salt, and pepper in the Cuisinart Mini-Prep or immersion blender to emulsify the dressing ingredients. Add the red onion to the dressing and soak while you prepare the rest of the ingredients.
  • Combine the Ingredients: Place kale, shredded carrots, sliced red cabbage, and sliced apples in a large mixing bowl.
  • Massage the dressing into the kale. Massaging the dressing into the salad is a critical step because it enhancing both the texture and flavor of the greens. Kale has a sturdy and fibrous nature that can sometimes make it tough and slightly bitter. Sprinkle the sunflower seeds all over the top to garnish.
