Honey Garlic Glazed Roasted Carrots

Honey Garlic Glazed Roasted Carrots are a classic side dish that my family loves.  There is nothing better than eating a sweet side dish and knowing it’s also healthy.  The combination of carrots, garlic, honey, and butter brings the sweetness you want without the guilt.  This is a perfect recipe to add to any meal, but it’s especially great for a holiday gathering.

INGREDIENTS TO MAKE HONEY GARLIC GLAZED ROASTED CARROTS:

  • Carrots
  • Butter
  • Honey
  • Garlic
  • Salt
  • Pepper
  • Parsley
HONEY GARLIC GLAZED ROASTED CARROTS

HOW TO PREPARE ROASTED CARROTS?

To begin clean one pound carrots and chop each carrot stick into six pieces long ways. Line a glass casserole dish with some foil. Grease it with non-stick cooking spray.

Preheat your oven to 400 degree F.

Arrange the carrots in the bottom of the casserole dish and season with salt and pepper.

In a glass measuring cup add the butter, garlic, and honey. Microwave for one minute until the butter has melted.

Pour the butter, garlic, and honey mixture over the carrots and toss the coating the carrots.

POURING HONEY BUTTER OVER THE CARROTS

Bake in the oven for 30 minutes or until the carrots are to your desired tenderness.

OVEN ROASTED CARROTS

Garnish with chopped parsley and serve immediately. Enjoy with your favorite protein. I choose to serve this with my Parmesan Crusted Chicken Breast. Check out this recipe.

TIPS FOR MAKING THE PERFECT CARROTS:

  • You can cut your carrots into slices or sticks. You can also use whole baby carrots if you want to cut down on your prep work.
  • It’s important when cooking carrots not to overcook them. Over-cooked carrots are mushy.
  • Honey Garlic Glazed Roastes Carrots can be prepared up to 2 days before you plan to serve them. Store the finished carrots in an airtight container in the refrigerator, then reheat them on the stove until warmed.
  • Leftovers can be stored in the refrigerator for up to 4 days.
  • Freezing them is not recommended once thawed precooked carrots are soggy.

WHAT DO YOU SERVE WITH ROASTED CARROTS?

Let’s talk about the main course!  Some of our favorite things to serve with these roasted carrots!  We have great recipes for Sweet Honey Garlic Glazed Chicken Thighs or Tender Bacon Wrapped Beef Tenderloin  If you want to get in veggies, then this is great with a green side salad, fill it with your favorite chopped-up vegetables and dressing. 

HOW DO YOU STORE AND REHEAT LEFTOVERS?

You can store roasted carrots in an airtight container in the refrigerator for up 4 days. To reheat, add carrots to a buttered skillet and heat over medium heat just until heated through. If the Glazed Carrots are dry melt in a little extra butter. You can also reheat in the microwave for one minute then at 30-second intervals stirring in between until heated through.

CAN YOU FREEZE ROASTED CARROTS?

Unfortunately, I wish I had better news for you here, but freezing cooked carrots is not recommended. Precooked carrots will turn mushy once thawed. It’s best to eat them when freshly prepared.
