    ADD THE SPICES AND THE TOMATOE PASTE TO BLOOM THE SPICES AND INTENSIFY THE FLAVOR

  3. Thicken the gravy:


    Sprinkle flour over the mixture, stir well, and cook 1 minute. Slowly add wine, scraping the pan. Add broth and Worcestershire.


    ADD THE FLOUR AND THE BEEF BROTH

  4. Simmer:


    Reduce heat and simmer 8–10 minutes until thick and spoonable. Stir in peas and fresh herbs. Taste and adjust seasoning.

  5. Assemble:


    Spread filling into a baking dish. Spoon mashed potatoes on top, spread evenly.


    SPREAD THE BEEF MIXTURE AND THE MASHED POTATOES ON TOP.

Technically, Shepherd’s Pie uses lamb, but I usually use beef. Most people call it Shepherd’s Pie anyway! If you use beef, it is a Cottage Pie. Both are delicious.
