The brine is an optional step but highly recommended. It's amazing how tender the pork will be after just two hours in the brine.
Prepare the Dry Rub: In a small bowl, combine 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 1 teaspoon of thyme.
Coat the Pork Loin: After brining, remove the pork loin from the brine and pat it dry with paper towels. Rub the pork loin all over with 1 tablespoon of olive oil, then evenly coat it with the prepared dry rub. If you choose not to brine the pork make sure you salt and pepper the pork loin,
Sear the Pork Loin: Heat a skillet over medium-high heat and add a drizzle of olive oil. Sear the pork loin on all sides until golden brown, about 2-3 minutes per side.
Transfer to Crock Pot: Once seared, transfer the pork loin to the crock pot, setting it on HIGH for two hours.
Prepare the Honey Garlic Glaze: In a small bowl, combine 5 cloves of minced garlic, 1 teaspoon of minced fresh ginger, 3 tablespoons of apple cider vinegar, ⅓ cup of honey, ⅓ cup of water, 3 tablespoons of soy sauce, 1 tablespoon of dijon mustard, 2 tablespoons of olive oil, and 1 tablespoon of sriracha (optional).
Glaze the Pork Loin: Pour the honey garlic glaze over the pork loin in the crock pot, ensuring it is evenly coated.
Cook Until Desired Temperature: Carefully check the temperature of the pork loin using a meat thermometer. Once it reaches an internal temperature of between 135-140 degrees Fahrenheit, remove it from the crock pot and let it rest. The temperature will increase to about 145 degrees Fahrenheit during resting.
Thicken the Glaze: Pour the remaining glaze from the crock pot into a small saucepan and bring it to a boil. In a separate bowl, mix together 1 tablespoon of cornstarch and 2 tablespoons of water to create a slurry. Whisk the slurry into the boiling glaze and cook until thickened.
